What’s up? It’s been a busy weekend, filled with lots of friends, house gatherings, board games and of course tons of cooking! As if we were celebrating mine saying YES TO THE DRESS!!!!!!!!
It’s official, it’s booked, it has my name on it and I just can’t wait to put it back on!!!! It’s already ordered and I’m expecting it in February! The girl in the shop said it will be here until the 15th of February. Do you think it will be a kind of Valentine’s present for myself??? That would be cool and amazing since that day will be our ringversary (when he prosposed!) Cool name, ha?
Back to the food, silly girl!!
Well, I made those tasty chesepies ahead, on Thursday night and put the dough in the fridge. It’s Mom’s recipe and I love how quick and easily you can put the ingredients together. All in one bowl! The next day, I baked them all and served them as entrees until the main course was ready, or delivered – yes, delivered. The following days, I simply reheated the leftovers for a while and they were as fresh as new!! They were gone in an instant! Everyone loved how soft and rich in flavor they were!
WHAT YOU NEED (for about 45-50 cheesepies):
- 250 gr butter
- 250 gr vegetable oil
- 250 gr greek yoghurt
- 1/2 kilo feta cheese
- 40 gr baking powder
- 1/2 tablespoon salt
- 1 teaspoon pepper
- 1/2 tablespoon paprika
- 1 teaspoon oregano
- 1 1/2 – 2 cups all purpose flour
Pre-heat the oven at 200 C ( 390 F) and line 2 baking sheets with parchment paper.
Simply, in a large bowl, using your hands, crumble the feta cheese and add the rest of the ingredients,EXCEPT FOR the flour.
Stir a little until the mixture is consistent and start adding the flour gradually. You want the end result to be fluffy and airy, and when you roll it into small balls it needs not to stick on your hands. So, see if it actually needs both of the cups.
Form into small bals the size of a big walnut, place them in the first sheet or pan, leaving a distance of 3 cm (1 inch) among them. Bake for about 20′ or until they’re golden and have raised a bit, all fluffy and soft! While they’re baking, prepare the second sheet. You will probably do the process twice.
When they’re done, remove from the pan and let them cool down. If you don’t consume them all at once, or even the same day,store in airtight container and put in the fridge for 5 days. They can be eaten cold or reheated! Equally tempting!!
