Peach (or Nectarine) Pie Crumble

Αυτή η Ροδακινόπιτα είναι πολύ ωραίο συνοδευτικό για καφέ ή τσάι. Δεν είναι πολύ γλυκιά και γι’ αυτό έχει πολύ ελαφριά γεύση με πρωταγωνιστή το φρούτο που θα βάλεις. Την βρήκα από το kitchen stori.es που έχει πολύ αναλυτικά όλες τις οδηγίες και είναι πολύ βοηθητικές. Εγώ απλά πρόσθεσα επάνω και τρίμματα πανεύκολης ζύμης crumble (που αναφέρω παρακάτω) για να είναι πιο κρατσανιστή και παιχνιδιάρα. Γίνεται γρήγορα , χωρίς πολύ κόπο- ούτε καν μίξερ!

This Peach Pie is a perfect companion for coffee or tea. It isn’t very sweet and that’s why it has a light flavor leaving space for the taste of the fruit. I found it on kitchen stori.es and the directions along with the pictures are super helpful! I also added a layer of crumble on top to make it more fun and crunchier. It’s easily done, no fuss, not even a mixer! For the english version, though:

WHAT YOU NEED:

  • 180 gr all purpose flour
  • 50 gr stevia or  100 gr sugar
  • 150 ml milk (I used almond milk)
  • 50 ml vegetable oil
  • 2 teaspoons baking powder
  • 2 teaspoons vanilla extract
  • 3 big peaches or 4 nectarines

for the crumble:

  • ⅓ cup  sugar
  • ½ cup flour (I used whole wheat)
  • 3 tablespoons butter, cold and cubed

 

KNOW HOW:

To make the crumble topping:

  1. Combine the sugar, flour, and butter (chilled and cubed) in a medium bowl. Mix with hands, or fork, or a pastry blender until crumbly. Set in the refrigerator until ready to use.

To make the pie:

  1. In a medium-sized bowl sift the flour with the baking powder. Add the stevia or sugar and pour in the milk and the vegetable oil. Mix softly until you have a thick porridge.
  2. Greese the base and the sides of a 26 cm (10 inches) cake pan with removable sides and add a little flour to coat it. Add half of the porridge. Put it in the oven for 3-4 minutes at 200 C (390 F ) until a light crust is formed.
  3. Wash and cut the peaches in slices.
  4. Over the baked dough, form a layer with half the amount of the fruit slices.
  5. Add the rest of the porridge and cover with the rest of the fruit slices.
  6. Bake for 35 minutes at 200 C (390 F) . It may need a couple more minutes. Just insert a toothpick or a knife all the way through the tart and if it comes out clean, without any residue, it’s done.
  7. Take it out of the oven, let it cool on a grid and remove the sides of the pan. Let it cool  down completely.
  8. Sprinkle with icing sugar if you like and serve.
